ISO 3103 is a standard for brewing tea, established by the International Organization for Standardization. Based on BS 6008:1980, which was established by the British Standards Institution in 1980, it was formulated by Subcommittee 8 (Tea) of Technical Committee 34 (Food Products). The abstract states the following: The method does not set out to define the correct way to brew tea, but rather prescribes a procedure for preparing tea for use in scientific testing. An example of such testing is the sensory evaluation of tea blends conducted for each harvest. The standard specifies pouring boiling water over the tea leaves and letting it brew for exactly six minutes. The original creators of this standard were awarded an Ig Nobel Prize in 1999. (cf. List of Ig Nobel Prize winners#1999) Details The pot must be made of white porcelain or glazed earthenware. It must also have a lid that fits loosely inside the pot. If a large pot is used, it must have a capacity of no more than 310 ml (±8 ml) and a weight of 200 g (±10 g). If a small pot is used, it must have a capacity of no more than 150 ml (±4 ml) and a weight of 118 g (±10 g). Place 2 g (with a ±2% tolerance) of tea leaves into the pot for every 100 ml of boiling water. Pour the boiling water to within 4–6 mm of the rim of the pot. Hard water must not be used. The brewing time for the tea leaves is six minutes. Pour the brewed liquor into a white porcelain or glazed earthenware cup. If a large cup is used, it should have a capacity of 380 ml and a weight of 200 g (±20 g). If a small cup is used, it should have a capacity of 200 ml and a weight of 105 g (±20 g).
